Famed Nashville Chef Deb Paquette to Launch Third Restaurant, Jasper’s

Famed Nashville chef Deb Paquette is going to work her magic once again. The mastermind behind downtown Nashville’s beloved Etch, as well as the popular Green Hills eatery, etc., Deb and 4Top Hospitality will together launch Jasper’s, a casual restaurant housed in the space left vacant when Saltine, the upscale seafood restaurant, closed in March.

According to the Nashville Scene, Jasper’s will offer casual food, like burgers, flatbreads, salads and more, along with generously-sized appetizers, like wings and her popular roasted cauliflower, which is a staple on Etch’s menu. Entrees will include a Tortilla Catfish with black-bean chili, and Steak and Egg and Roasted Yardbird with bacon. Homemade desserts will also be made on-site as well.

For those who want Deb’s culinary creations without having the time to sit down and eat, a grab-and-go market will also be part of the new space, called The Market at Jasper’s, with meals, sauces, spices, soups, desserts and more all available for purchase.

4Top partner Doug Hogrefe is eager to join forces on the new venture with the renowned chef.

“First off, when Deb wants to open another restaurant, you say yes,” Doug said. “She’s primarily been in fine dining for a long time and wanted to do a casual restaurant. We happened to have a spot that was closed, so it was a natural transition to turn the space into a casual eatery and market.”

Jasper’s, named after Deb’s beloved Jack Russell Terrier, will open in late October. Currently listed hours are Sunday through Thursday from 11 AM to 10 PM, and Friday and Saturday from 11 AM to 10:30 PM
